عدم وجود رطوبت و نور در محيط نگهداري زعفران بسيار مهم است و بهترين شرايط نگهداري براي زعفران، محيطي تاريک و بدون رطوبت است.

زعفران ها بايد هر ماه يک بار از لحاظ شرايط نگه داري و کيفيت بررسي شوند.

نگهداري در منزل

شيوه نگهداري زعفران هرچند به مقدار کم در منزل مانند نگهداري در انبار است. براي نگه داشتن زعفران در شرايط مناسب بهتر است ابتدا آن را به صورت کامل خشک و آسياب کرده و در ظرفي که جريان هوا نداشته باشد قرار دهيد. 

بهتر است که زعفران هارا به صورت وکيوم شده درون يخچال قرار دهيد. توجه داشته باشيد که هيچگونه رطوبتي نبايد به زعفران ها برسد و همچنين دماي مکاني که زعفران ها در آن جا نگهداري مي‌شود نبايد بيش از حد گرم باشد زيرا باعث مي‌شود که زعفران ها خاصيت خود را از دست بدهند.
